According to Atlanta Magazine, renowned chef Fuyuhiko Ito, known for his delicate, high-end sushi and international culinary experience, is opening three new restaurants in Midtown at Ten Twenty Spring: Ishin by Ito, a 16-seat omakase spot; Celestia, a rooftop cocktail lounge; and Sozou, a modern Japanese eatery.
Ishin by Ito and Celestia are now soft-open, with Sozou set to debut early next year. Ishin by Ito offers guests an intimate 16-seat chef’s counter with fresh fish flown in from Japan five days a week. Guests are greeted with a champagne toast and a curated multi-course meal, including sashimi, nigiri, intermezzo dishes, and desserts crafted by pastry chef Lisa Ito, Fukuhiko’s wife.
Celestia, accessed via private elevator, is an indoor-outdoor lounge featuring natural oak, marble countertops, soft seating, and weekend DJs. The lounge offers a refined beverage program, including sake, French wines, Japanese beers, and signature cocktails such as the Twilight Burn and Tokyo Skyline, alongside a global menu with caviar, wagyu tataki, oysters Rockefeller, and more.
On the ground floor, Sozou will focus on approachable sushi, robata-grilled fish and meat, crudo, and crispy rice, offering dishes for a broader audience while maintaining the chef’s signature attention to quality and flavor.
Together, these three concepts showcase Fukuhiko Ito’s 30-plus year career and highlight Ten Twenty Spring as a vibrant culinary destination in Midtown.
